Another question regarding Chasseurs a Cheval. From the Knotel paintings it would seem that rank was indicated by either chevrons or epaulets. Am I correct in the impression that the former were used with the older hussar style dolman, while the latter was associated with the later habit/kinski?

Captain, my source (Emir Bukhari, Napoleon's Cavalry; London - Osprey, 1979) states that service chevrons (upper left arm) and NCO rank chevrons (near the cuff) remained the same throughout the evolution from habit-long, through kinski (1808), to habit-veste (1812). He agrees with you that epaulettes (introduced for officers in 1806-ish) 'displaced' the use of cuff rank chevrons by officers, and in conjunction with colpack headgear, became common distinctions for 'elite' companies.
