I am reading David Buttery's book "Wellington against Massena" and thoroughly enjoying it too . However in the chapters on Fuentes d'Onoro he mentions attacks by "Grenadiers of the Imperial Guard" and "Grenadiers of the Young Imperial Guard". None of the orbats that I have for the battle show any Guard Infantry units so who does he mean ?

Alan,
They are neither - the units in question are the combined Grenadier battalions of the Line and Light units (-Grenadiers Réunis-) - wearing their bearskins!
